Seppeltsfield Aged Flor

Description

Seppeltsfield's DP116 is crafted using the Palomino variety, renown for its neutral flavour profile and suitability to dry Apera (Sherry) styles.
The DP116 is similar to the DP117 dry flor, where a layer of yeast (flor) adds palate complexity in the form of aldehydic characters. This layer of flor however is later removed with the DP116, prompting oxidative maturation and the development of subtle nutty flavours. This style has previously been likened to the traditional Spanish Amontillado Sherry.
