Winemaking
Pinot Noir - fermentation in small open fermenters and ceramic eggs with whole bunches added after fermentation, then 6 months in big old and a touch of new oak.
Syrah - fermentation in small open fermenters with run off into big old oak to complete the fermentation.
Grenache - lots of whole bunches in open fermenters for the fermentation then some time to macerate on the dry skins before a soft pressing to large old oak for settling and maturation.
What each grape brings to the blend - Pinot Noir gives lush red berries and pretty blueberry fruit notes and a supple opulence to the mid palate. Syrah imparts intense dark cherry, exotic sweet spice, liquorice root and savoury bush herbs, while adding a concentration and softness to the palate, as well as fine tannins and a gentle mineral grip to finish. Grenache brings a talc-like strawberry dust, stalky chalky tannins and a nice defining grip.
