Mild growing season, timely Spring rain, slow ripening, lovely colour and tannin development.

Tasting Note

Pale salmon in colour. Delicate, brioche, strawberry, gently aromatic. Dry, creamy red fruits, textural, persistent and serious delicious.

WINEMAKING

Fruit is harvested and pressed immediately. Juice is settled overnight and racked to small casks and allowed to ferment with indigenous yeast. The casks get a little stirring of lees at the end of fermentation and undergo malolactic fermentation to give creaminess and complexity.
