Varietals Pinot Gris 59%, Chardonnay 17%, Sauvignon Blanc 14%, Riesling 10% Margaret River (Karridale) & Great Southern (Mount Barker)
Winemaking
Pinot Gris - bags of whole bunches fermented in ceramic eggs.
Chardonnay - whole bunch pressed to big old French oak puncheons to ferment and then relax for a few months.
Sauvignon Blanc - high solids natural ferment in stainless steel barrels.
Riesling - natural ferment in tank with low juice solids at a cool cellar temperature.
What each grape brings to the blend - Pinot Gris for the exotic sweet spice, guava fruit and a slippery texture. Chardonnay fills the middle palate with ripe melon flavours and all round generosity. Sauvignon Blanc for its vibrancy and unmistakable notes of gooseberry, sweet herbs and elderflower. Riesling brings wet stone and citrus zest to tighten things up and give length and finish.
